Husband had the bright idea to begin our annual ski trip to Steamboat Springs, CO, on Christmas Day, which resulted in a 4:00 AM wake up call. Thankfully, Santa was punctual in delivering gifts to our house. Our 6:30 AM flight didn’t give us a lot of time to open gifts, but we got it done!
The major spike in cancelled flights did affect us, but we were able to rebook through Chicago instead of Atlanta. Our arrival time didn’t change much. The last minute panic was unfortunate, but definitely could have been worse. Our flights home were not affected.

I’ve posted about Steamboat numerous times, so not a lot of new information here. We stayed at the always fabulous One Steamboat Place, like always. I will say that the pandemic problems (supply chain, employment) are just as present in Steamboat as everywhere else, so the overall experience is different. Dinner reservations are very hard to come by and some restaurants are not even open every day. We cooked many meals in our condo, so plan accordingly if you’re heading to a ski resort.
Hubby’s family trickled in over the next two days and we were all happy to be together. Emery and Bodie love spending time with their Texas cousins and we do not get to see them nearly enough.

Conditions were not the best our first few days, but we got plenty of snow at the end of the week. The lack of snow didn’t deter the kids, though! They skied every day and almost every night. The adults enjoyed watching the night skiers come down the hill. Emery’s coat really stood out, so she was easy to spot.

Per usual, our favorite dinner of the trip took place at Cafe Diva. Chef Kate continues to be amazing and the veteran staff members are phenomenal. Make sure you book early!

When not on the slopes, the kids were found in the swimming pool or playing cards.

Steamboat Springs is home to a fun bowling alley called “Snowbowl.” My MIL booked us a few lanes there one evening and we had so much fun.

2021 wasn’t the best year for many of us and I was determined to kick things off with a traditional meal of collards and black eyed peas. Since we were in CO and we had to eat this feast for breakfast before our mid morning flights, I didn’t go all out. I skipped the cornbread and pork, but the black eyed peas and collards were present.

Cheers to a happy and healthy 2022!
xoxo,
Ashley
