This has been the mother load of all weeks! Between coming home from a vacation and being in the throes of end of school craziness, I’ve had LOTS of monogram orders. Monogram Monday is going to be a doozy. In the meantime, here’s a snippet of what my week has been like….The kids’ collection of artwork has been coming home the past few days and I am loving their masterpieces. Bodie’s abstract name art is seriously cool and the shark made my year. Emery actually made this pink and green pinched bowl for Gipper, but I stole it for myself! It’s the prettiest colors and is perfect for holding my coffee spoon in between cups each morning. Our school has the most incredible art teachers.
We’ve been eating kind of junky lately, so I whipped up this sheet pan dinner the other night in an effort to get something lean and nutritious into our bellies. It was a big hit and super simple. Bodie actually asked for it again the following night. I simply melted half a stick of butter and mixed it with 1/3 cup of chicken stock and one clove of garlic. Spray the sheet pan with Pam, sprinkle salt and pepper (I use pink salt) on the chicken breasts and tiny potatoes and drizzle the butter mixture all over everything. Add a dash of thyme and roast for 40 minutes on 400 degrees. I drizzled olive oil, salt and pepper on some broccoli florets and added them to the oven for the last fifteen minutes of cooking time. Emery won’t eat broccoli, so I sliced some strawberries for her and called it good. Everyone ate the carrots and apples.
This guest room is next to my monogramming cave and Gipper has officially declared it his bedroom. He no longer fits on his baby blanket. He is content to snooze while I stay up late completing orders. I love that mutt.
I attended a packing party for The Homeless Period Project at a friend’s house last night. I am so impressed by how many supplies we collected and I really enjoyed learning more about this organization. Check out their web site at www.homelessperiodproject.org to learn more.
