I’m working on a fun project and my ideas are all over the place, which is evident in this post. So, here’s a roundup of some of the stuff running through my head these past few days….First up, I purchased this at Publix the other day and I am obsessed. This stuff is amazing. It smells like paradise and is super moisturizing. I need to stock up. My kids also love it and this bottle is disappearing fast! Do yourself a favor and grab some.
Next up is this dinner I made Monday night that had everyone asking for seconds. Hubs even took the leftovers for lunch the next day. That happens approximately never. The recipe is from Southern Living and it’s called Skillet Enchiladas Suizas. It was pretty quick, decently healthy and cooks all in one dish. Can’t beat that with a stick.
- 2 tablespoons olive oil
- 1 medium-size yellow onion, chopped (2 cups)
- 3 garlic cloves, minced (1 1⁄2 Tbsp.)
- 1 1/2 teaspoons ground cumin
- 1 (14.5-oz.) can diced tomatoes, drained
- 1 1/4 cups tomatillo salsa
- 4 cups shredded rotisserie chicken
- 1 cup crema or sour cream
- 6 (6-inch) corn tortillas, torn
- 8 ounces Monterey Jack cheese, shredded (about 2 cups), divided
- 1 small (6 oz.) avocado, diced
- Torn fresh cilantro leaves
Preheat broiler to HIGH. Place oil in a medium-size cast-iron skillet, and heat over medium, swirling to coat. Add onion, and cook, stirring occasionally, until lightly browned, about 6 minutes. Add garlic and cumin. Cook, stirring often, until fragrant, 1 to 2 minutes. Reduce heat to medium-low. Stir in drained tomatoes and salsa. Simmer over medium-low, stirring often, until slightly thickened, about 2 minutes.
Remove skillet from heat. Stir in chicken, crema, tortillas, and 1⁄2 cup of the Monterey Jack cheese. Top evenly with remaining 1 1⁄2 cups cheese.
Transfer skillet to preheated oven, and broil until cheese is lightly browned, 8 to 10 minutes. Top with avocado, and sprinkle with cilantro leaves.
I used chicken breast fillets that I boiled and shredded earlier in the day. I swapped out flour tortillas for corn because I already had some in my pantry. I can’t wait to make this again!
My all time favorite bags are making an appearance again. These are a few requests I’ve gotten lately as people start prepping for spring break. This “car crap” bag is a custom request, but I’ve since had a few more orders. Who wouldn’t need this? The SPF, goggles and first aid bags are such a great way to stay organized when traveling. Or just heading to the pool.
Lastly, I stitched this for the hubs. He never asks for stuff like this, so I was happy to do it. Logos aren’t my favorite, but I can’t say “no” to this one.
