Mississippi Chicken

Mississippi Pot Roast has been a favorite in my household for ages. The recipe calls for beef and a crock pot. Served over egg noodles, it’s hearty and easy and delicious. Recipe for the original here: https://www.thekitchn.com/mississippi-pot-roast-recipe-23027427

I recently saw an Instagram story about this cult classic recipe, but made in the oven with chicken. I figured this would be a lighter version of Mississippi Pot Roast and gave it a shot. Spoiler: it’s just as good as the pot roast version and took less than half an hour, start to finish!

The ingredients for the chicken dish are the exact same as the beef edition, except I swapped out the pot roast for four boneless, skinless chicken breasts. To prepare, I sprayed a casserole dish with olive oil cooking spray and arranged the chicken. I sprinkled with packets of gravy and ranch (didn’t use the entire pouches; only about half) and topped with a big pat of butter. Lastly, I poured some juice from a pepperoncini jar on the bottom and placed a few peppers on top of the chicken. I roasted, uncovered, for 25 minutes at 425 degrees.

For the side dish, I tossed some cherry tomatoes with olive oil, salt, pepper and fresh basil. I threw them in the oven for 20 minutes with the chicken. I served everything on top of simple egg noodles.

This is a new item for me so I can’t guarantee the longevity, but this towel bar is one of those, “why didn’t I do this sooner?” purchases. I love not having my dish towel taking up space on the counter.
