Meal Plan for the Week

I shared a meal plan sample back in the fall and it was well received. It’s time for another, this time with a focus on hearty, cozy meals. As always, these are something that can come together relatively quickly, thrown in a slow cooker, or be made ahead of time. That’s just the season of life I’m in right now. Ina Garten’s lasagna is such a flavorful treat! I actually made two of these several days before Christmas and popped them in the freezer until Christmas Day. I thawed them for a few hours and then baked for our dinner. I served with garlic bread, a salad, and a caramel cake (which my mom purchased in Atlanta and brought with her). Prepping ahead of time and keeping things simple allowed my to fully enjoy Christmas morning with my family.

I can’t seem to find a picture of the breakfast casserole, so I’m sharing one from Dixie Delight’s site (https://dixiedelightsonline.com/). I made this Christmas Eve and served it for breakfast Christmas morning, along with Pilsbury cinnamon rolls. Easy as can be. More often than not, we have it for dinner. I serve it with fruit.
