Happy Sunday! I have spent the majority of my weekend at the soccer complex for the fall festival tournament. The weather has been miserable (cold and rainy), but Emery’s team has played really well and we’re heading to the championship game at 2:00 this afternoon with two wins and one tie. We’re the top seed.

I know many of you meal plan on Sunday, so I’m sharing an easy weeknight dinner that is new to our rotation.

Apparently incorporating snack items into an entree is our jam. Therefore, when I cam across Mix and Match Mama’s recipe for Frito pie, I knew I had to make it. To the surprise of no one, it was a big hit. Bonus: the leftovers were even more delicious.

Ingredients

  • Corn chips (like Trader Joe’s Corn Dippers or Fritos)
  • 2 pounds of ground beef
  • Extra Virgin Olive Oil (EVOO)
  • 1 red onion, chopped (reserve some for garnishing)
  • salt and pepper
  • 1 tablespoon chili powder
  • 1 (12 oz) can of tomato paste
  • 1 (14 oz) can cream corn
  • 1½ cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees.
  2. Lightly spray your 9×12 baking dish with a non-stick spray.  Sprinkle corn chips over the bottom of your baking dish until it’s covered.  Set aside.
  3. In a large skillet over medium-high heat, brown up your ground beef in a drizzle of EVOO until browned and crumbly.  Add in your chopped onion and a big pinch of both salt and pepper.  Let the onions get tender (about five minutes) and then stir in your chili powder followed by your tomato paste and corn.
  4. Reduce the heat to low and simmer together about 8 to 10 minutes.  Stir in your shredded cheese.
  5. Once the cheese is melted, pour this mixture down over your baking dish and pop it in the oven to bake up about 10 minutes.
  6. Remove from oven and garnish with remaining chopped red onions and serve.
Frito Pie

I’m not a total savage, so I served with broccoli and carrots (for Ben, Bodie and me) and fruit for Emery (Miss Picky). Enjoy!
