Emery’s Pickles

If you’ll recall, we had an abundance of cucumbers in our garden this year. One can only eat so many Greek salads. Emery decided to pickle some cukes after seeing something on Tik Tok. I am honestly not sure what she saw because I do not have Tik Tok. We attempted to make our own pickles last year with a prepackaged pickling seasoning mix and they were TERRIBLE. As a result, Emery went into this with low expectations.

Em’s Pickles

They are delicious! We can’t stop eating them and Bodie requests that I include one in his lunch every day. Thankfully, our garden is still producing cucumbers, although production has slowed a bit. I asked Emery for her recipe and she told me that she cobbled together several from Tik Tok to make her own. I’ll share below:

Emery’s Pickle Recipe
  • 4-5 small cucumbers
  • 1 cup white vinegar
  • 1 cup cold water
  • 1 TB sugar
  • 1 TB minced garlic
  • 2 tsp dried dill (or fresh if available…Em used dried)
  • 1/2 tsp crushed red pepper flakes
  • 1 TB salt
  • 1 tsp black peppercorns

Wash cucumbers and cut them into spears.

Mix vinegar, salt and sugar in a small saucepan and heat until sugar is dissolved. Add the water. Let cool in the fridge.

Stuff the spears into jars (we got about three mason jars out of our batch) and add the remaining ingredients. Pour the chilled brine over the cucumbers until they are fully covered. Screw on the lid and let sit in the refrigerator for 24 hours. The pickles will keep for a month, although ours tend to disappear well before that. Enjoy!

Life hack: you can reuse the brine. Just add more cucumbers to the jar.
