Egg White Bites in the Air Fryer

Funny enough, Bodie asked for an air fryer for Christmas. He’d enjoyed some nuggets and pizza rolls at friends’ houses that were prepared in an air fryer and he was sold. Admittedly, I was not on board. I didn’t think he’d use it very often and I didn’t want another appliance taking up room on my counter. But of course my mom bought him the air fryer because she never says “no” to her grandchildren.

I’m happy to admit that I was wrong! We all enjoy reheating food in the air fryer. I also discovered a recipe for egg bites just like Starbucks sells! I purchased an egg mold on Amazon and got busy. They’re delicious, healthy and quick to make. Checks all the boxes. Below is the recipe I used for the base. Egg White Bites

Ingredients

  • â–¢ non-stick cooking spray
  • â–¢ 6 large egg whites or ¾ cup liquid egg whites
  • â–¢ 2 tablespoons 1% milk
  • â–¢ 2 tablespoons crumbled reduced-fat feta cheese
  • â–¢ 1 tablespoons finely chopped sundried tomatoes
  • â–¢ 1 scallion (green onion) sliced (white and green portions)
  • â–¢ â…› teaspoon kosher salt
  • â–¢ â…› teaspoon freshly ground black pepper

Instructions

  • Lightly spray a 7-cavity silicone egg bite mold and set aside
  • Add all the ingredients (egg whites, milk, feta cheese crumbles, sundried tomatoes, scallion, salt and pepper) in a large bowl and whisk to fully combine (the egg whites should be completely blended in).
  • Divide the egg mixture evenly between the prepared cavities in the mold. Place the mold into the air fryer basket. DO NOT use the lid that comes with the mold!
  • Cook at 350 Ëš F for 12 minutes. Open the air fryer and remove the mold, Allow the egg bites to site in the mold for 5 minutes. NOTE: the egg bites will be inflated when coming out of the air fryer. As they sit they will deflate and become denser.
  • Remove the egg bites from the mold and place on a paper towel on a plate for 1-2 minutes before serving.

Air Fryer

I have made these multiple times since Christmas and the entire family likes them. I love giving the kids a solid dose of protein before school. I didn’t have the exact recipe ingredients on hand, so I’ve modified with cheddar, mozzarella, parm and various spices. Red pepper flakes and oregano were wonderful. Have fun and play around! Pro tip: mix ingredients together in a large measuring cup instead of a bowl. It’s much easier to pour the mixture into the mold.

We continue to love our salt and pepper grinders. Everyone in my family now has a set. They’re life changing. See for yourself here: https://amzn.to/3XzGtI2

I hope your week (a short one!) is off to a great start.
