Egg Roll Bowl from Seersucker and Saddles

Our weeknights are extra busy this season and I’ve been trying to amass some quick, healthy and tasty recipes to add to the usual rotation.  My sister sent me this recipe for egg roll bowls by Beth Chappo of Seersucker and Saddles to try.  Spoiler:  it’s incredible.  Beth’s cookbook, That Bowl Life, is loaded with recipes like this.  Her blog is also an excellent resource for family friendly meals.  https://seersuckerandsaddlesblog.com

This comes together in no time flat and is full of flavor.  Plus, it’s healthy!

That Egg Roll Bowl

Ingredients:

Sesame oil

1 lb ground turkey or ground pork (I used ground turkey breast)

1 bag coleslaw mix

1 tablespoon rice wine vinegar

1/4 cup soy sauce

Sriracha ranch dressing

Sesame seeds

Directions:

  1.  Heat sesame oil in a large skillet over medium-high heat.  Brown ground turkey or ground pork until no longer pink (8-10 minutes).
  2. In a separate skillet, heat sesame oil over medium-high heat.  Add coleslaw mix and saute until tender, about five minutes.
  3. In a small bowl, make a sauce with rice wine vinegar, soy sauce and Sriracha.
  4. Add the sauce and cooked turkey or pork to the coleslaw mix.  Stir until combined.
  5. Build your bowl:  put a big heap of the coleslaw mixture into your bowl.  Top with Sriracha ranch and sesame seeds.  You can enjoy the bowl now, but it’s just as good later.  #leftoversarelife

Rarely does everyone in my family enjoy a dinner, so when they do, I make sure to share the recipe.  This is one of those select few that fits the bill.  The only change I made is that I used regular ranch dressing instead of Sriracha because I was worried the kick might be a bit too much for my kiddos.
