I needed a quick dessert to take to a friend’s house last night and I immediately thought of Airica Puckett’s take on the Dolly Parton coconut cake mix. I’m a sucker for anything Dolly. And anything coconut, so this was a no-brainer. Airica takes the standard box mix and jazzes it up with pineapple and shredded coconut. The frosting is a cream cheese glaze (more on that in a minute). But clearly this was delicious. Dolly Parton Coconut Cake Modified Recipe

I followed the cake recipe down to the letter and it turned out perfectly! The shredded coconut and pineapple juice make for the perfect summer cake.

I am not a big fan of canned frosting, so I made my own cream cheese frosting. I also wanted it to be more of a glaze so that it would fill in the crevices of the bundt cake design. I simply whipped up 4 oz cream cheese (at room temperature), two tablespoons butter (room temperature), one cup of powdered sugar and a splash of vanilla. Once it was mixed well and in frosting form, I transferred it to a glass measuring cup and microwaved it on high for about thirty seconds. Then I simply poured it over the cake, which is much easier than spreading with a knife.
I carried the cake to my friend’s house in my trusty cake carrier. This thing is a game changer. If you don’t already have one, you need one ASAP.
