I’m back again with another gourmet recipe! Several weeks ago my mom, grandmother and uncle came up for a quick, last minute visit. I’d already put all of the ingredients for this dinner in the crockpot (my first time making it) so I warned my visitors that dinner would be a VERY casual affair and hoped it turned out okay. Much to my delight, everyone loved it! I don’t know that I’d serve it for company very often, but close family is certainly fair game. The best part about this chicken is it’s served on Kings Hawaiian rolls. Who doesn’t love those!?!?!
Creamy Crockpot Chicken
Ingredients
2 pounds chicken breasts
1 packet ranch dressing mix
1 (8-ounce) block cream cheese
1 cup shredded cheddar cheese
4 green onions sliced buns or croissants, for serving (I use Kings Hawaiian rolls because my children are obsessed with them)
Directions
- In a slow cooker, add your chicken. Sprinkle the chicken with ranch and add in the cream
cheese. Cover with the lid and let it cook on low for 6-7 hours. - Remove the lid and shred the chicken, mixing in the cream cheese.
- Add in the cheddar cheese, and green onions, stirring to fully combine.
- Serve on the buns or croissants and enjoy!

If you haven’t noticed yet, we’re in the midst of a cream cheese shortage, which is a bit of a crisis for me during the holidays. Oy. So, as I pass along this recipe to you all I hope you’re able to locate cream cheese. My Publix was totally out of stock, but a friend happened to be at another Publix just down the street and they had plenty. However, your purchase is limited to two items, so stock up when you can.
In an effort to make this a healthier meal, I served with fruit and broccoli. Again, these are kid friendly options. But it’s the perfect busy weeknight meal.
