Cheeseburger Pasta

I saw this recipe on Mix and Match Mama’s Instagram the other day and knew my family would love it. I made it tonight and, spoiler, I was correct. It’s quick and easy and full of flavor. Cheeseburger Pasta

Ingredients

  • 2 pounds of ground beef
  • Extra Virgin Olive Oil (EVOO)
  • 1 red onion, chopped (reserve some for garnish)
  • salt and pepper
  • 1 (1 oz) packet of dry Ranch seasoning (do not prepare, keep it dry)
  • 1 (14 oz) can of diced tomatoes, do not drain
  • 1 (6 oz) can of tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon spicy mustard
  • 1 pound of cooked and ready to eat pasta (we use gluten-free)
  • shredded cheddar cheese to garnish, optional
  • chopped dill pickles to garnish, optional
  1. Brown your ground beef over medium-high heat in a drizzle of EVOO until browned and crumbly.  Add in your chopped red onion and a pinch of both salt and pepper.  Stir in your Ranch seasoning and allow the onions to get a little tender (about five minutes).
  2. Next, stir in your diced tomatoes, tomato paste, Worcestershire sauce and mustard.  Reduce heat to low and simmer about 10 minutes before ladling into bowls and serving with your garnishes.

I chopped up about half a dozen dill pickles and mixed them with the sauce and noodles before serving. Once in bowls, I topped with the cheddar and a bit of shredded lettuce. I served with cut fruit and carrots since we were all eating at different times: tennis, pool and golf prevented us from sitting down together. That’s okay! These days are fleeting.
