So many happy spring orders have been coming my way lately! I love it. These colorful cosmetic bags shipped to Chicago this afternoon for a spa party. A set of eight year old twin girls will gift their party guests with these as their favor.
Doesn’t get much more spring-like than these mint Converse with a PINK monogram! I adore these. Monograms on Chuck Taylors are such an unexpected way to add a bit of preppy fun to a casual outfit.
Speaking of unexpected, my dear friend C dropped by with this yesterday. It’s perfect! The dog even looks like Gipper. I thoroughly enjoyed my cappuccino (with two extra shots of espresso) this morning. Even more so than usual. #womansbestfriend But seriously, the way to my heart is coffee and dogs! And chocolate and wine. Thank you, C! I love my girlfriends so much. I couldn’t do life without them.
These soccer decals were kind of tricky to weed. I’m a little embarrassed to say I had to keep referencing a picture of a soccer ball in order to peel the correct pieces of vinyl. For some reason the pattern was not super obvious to me. Can you tell I never played soccer? At any rate, I think these turned out cute on the white tumblers and I sure hope the balls are correct.
I made meatball sub casserole Sunday night and we ate the leftovers last night. It’s the gift that keeps on giving the whole year. In all seriousness, this dish had kind of fallen off my radar the past few months and I have no idea why. It’s delicious, easy and reheats beautifully. I have had the recipe for so long (a Pinterest find, I think) that I’m not entirely sure of the source, but I found the exact version on www.familyfreshmeals.com. I served our casserole with roasted broccoli and cauliflower. And fruit for Emery since she won’t touch a vegetable. Recipe below photos.
Meatball Sub Casserole
1 baguette cut into one inch thick slices
4 oz cream cheese at room temperature
1/4 cup mayo
1/4 cup plain Greek yogurt
1/2 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried parsley
1/4 tsp salt
1/4 tsp pepper
2 cups grated mozzarella
2 lbs frozen meatballs (I use Earth’s Best mini meatballs. They’re really easy for the kids to eat).
28 oz marinara sauce (I use tomato and basil)
1/2 cup water
Preheat oven to 350 degrees.
In a medium saucepan, place water, sauce and meatballs. Simmer for 10-15 minutes. Set aside.
Place bread slices in an ungreased 9 x 13 baking dish.
Next, combine cream cheese, yogurt, mayo and seasonings.
Spread cream cheese mixture over bread slices. Sprinkle half of the mozzarella. Spoon meatballs and sauce over the bread. Top with remaining mozzarella.
Bake, uncovered, for 20-25 minutes. Enjoy!
