This unlikely combo was a homerun for dinner last week. An email from Easy Family Recipes landed in my inbox and the title immediately caught my attention. All four of us thought this was wonderfully flavorful, comforting and fun. I made the meatballs in the afternoon (which didn’t take long) and then used the delay start feature on my oven so that we came home from a soccer game to piping hot meatballs. I whipped up a box of rice and the whole dinner was ready within minutes of walking in the door. Enchilada Meatballs

Ingredients
- 2 pounds lean ground beef
- 1 onion finely diced
- 1/4 cup milk
- 1 cup breadcrumbs
- 2Â large eggs
- 1 tablespoon Worcestershire sauce
- 3 tablespoons taco seasoning (1 packet)
- 19 ounce can red enchilada sauce(one can)
- 1 cup shredded sharp cheddar cheese or mexican blend
Garnish (optional)
- Cilantro
- Pico de Gallo
- sour cream
Instructions
- Preheat oven to 350ËšF.
- In a large bowl, combine the ground beef, onion, milk, bread crumbs, egg, worcestershire sauce, and taco seasoning.Use your hands to work the mixture until everything is completely, and evenly combined.
- Roll the meat mixture into 1.5 inch meatballs. It should make 24-26 meatballs.
- Pour 1/4 cup of the enchilada sauce into the bottom of a large casserole dish. Arrange the meatballs in the dish, then pour the remaining enchilada sauce over the meatballs. Sprinkle cheese over the top.
- Bake for 40-50 minutes or until the edges are bubbly and the meatballs are cooked through to 165ËšF internal temperature.
- Top with your choice of garnish and serve warm.
